Food Allergy Policy

At Hotel Tsubakino we treat food allergies as a matter of guest safety. The policy below explains what we can and cannot do, so that you can dine with us safely.

If you or anyone in your group has a food allergy or dietary restriction, please send us the details listed at the bottom of this page at least 5 days before your stay.

If we do not hear from you, we cannot change your menu, and we are unable to accommodate requests made on the day of arrival. If your stay is already less than 5 days away, please contact us as soon as you can. We cannot promise to accommodate you, but we will do what we can.

Our basic approach

We prepare many different ingredients in the same kitchen and do not use separate utensils for each ingredient. We therefore cannot guarantee that a dish is completely free of traces of an ingredient, even when that ingredient is not part of the recipe. Please read this page with that in mind.

Japanese cuisine also depends heavily on dashi (broth) for its flavour, and dashi is central to the dishes we are proud to serve. If the ingredients used for dashi (dried bonito, kombu seaweed, dried sardine) are a concern for you, please tell us clearly.

It helps us a great deal if you tell us whether an ingredient is a true allergy or simply something you prefer not to eat.

Cases we may not be able to accommodate

  • Requests made on the day of arrival
  • Vegetarian, vegan, gluten-free requests
  • Severe allergies where even trace contamination may cause a reaction
  • Halal: we do not handle halal-certified ingredients. We can recommend restaurants nearby that do.

How we respond

Mild symptoms

We will serve our kaiseki course with the ingredients concerned removed.

Severe symptoms, multiple allergies

We will discuss your meals with you individually, then prepare them accordingly. Depending on the nature of the allergy we may still be unable to accommodate your request. If that is the case we will tell you early, with alternatives such as nearby restaurants that can accommodate you.

Item 7 is the most useful of all for our kitchen when planning your menu. If you have photos of meals you have eaten safely elsewhere, please send those as well.

Our kitchen will review what you send, then reply with what we can do, plus how we plan to adapt your menu. You are also welcome to call us with any questions.
